MARINADE:

  • ⅓ cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, thinly sliced
  • 1 tsp sriracha, optional

CUCUMBER SALAD:

  • 3 English cucumbers
  • 2 carrots
  • 1 tbsp rice vinegar, for salad
  • 1 tsp toasted sesame oil, for salad
  • 1 tsp honey
  • ⅓ tsp kosher salt, for salad
  • 1 tbsp toasted sesame seeds
  • 1 green onion, thinly sliced, for garnish

INSTRUCTIONS

  1. In a bowl or zip-top bag, whisk together soy sauce, brown sugar, toasted sesame oil, rice vinegar, garlic, ginger, green onions, and sriracha. Add the flank steak, turn to coat, and marinate in the refrigerator for at least 1 hour or overnight.
  2. Using a vegetable peeler, shave the English cucumbers lengthwise into thin ribbons, stopping when you reach the seedy core. Discard the cores. Julienne the carrots using a box grater.
  3. In a large bowl, whisk together rice vinegar, toasted sesame oil, honey, and kosher salt. Add the cucumber ribbons and carrots and toss gently to coat. Refrigerate until ready to serve.
  4. Remove the steak from the marinade, letting the excess drip off, and discard the marinade. Heat a grill or grill pan over high heat.
  5. Grill the flank steak for about 10 minutes per side for medium-rare, or until a thermometer reads 130–135°F.
  6. Let the steak rest for 10 minutes, then slice thinly against the grain.
  7. Top the cucumber salad with toasted sesame seeds and sliced green onion. Serve alongside the sliced steak.
