Ingredients

  • 1 tsp kosher salt, for steaks
  • ½ tsp black pepper, for steaks
  • 1 tbsp olive oil

TOMATO-HERB BUTTER:

  • 4 tbsp unsalted butter, softened
  • 1 tbsp sun-dried tomatoes, finely chopped
  • 1 tbsp fresh basil, finely chopped
  • 1 tsp fresh chives, finely chopped
  • 1 garlic clove, minced
  • ½ tsp kosher salt, for butter

CORN TOMATO SALAD:

  • 2 ears fresh corn, husked
  • 1½ cups cherry or heirloom tomatoes, halved or quartered
  • 2 tbsp fresh basil leaves, torn
  • 1 tbsp olive oil, for salad
  • 1 tsp red wine vinegar
  • ½ tsp kosher salt, for salad
  • Pinch black pepper, for salad

INSTRUCTIONS

  1. Make the tomato-herb butter by mashing together softened butter, sun-dried tomatoes, fresh basil, chives, garlic, and kosher salt until well combined. Scrape onto plastic wrap, roll into a log, and chill in the refrigerator while preparing the rest of the dish.
  2. Heat a grill or grill pan over high heat. Grill the corn on all sides until lightly charred, about 10 minutes. Let cool slightly, then slice the kernels off the cob.
  3. Make the corn tomato salad by combining the corn kernels, cherry or heirloom tomatoes, and torn basil in a bowl. Drizzle with olive oil and red wine vinegar, then season with kosher salt and black pepper. Toss gently and set aside.
  4. Pat the sirloin steaks dry and season all over with kosher salt and black pepper.
  5. Heat olive oil in a grill pan or on the grill over high heat. Cook the sirloin for about 10 minutes per side for medium-rare, or until a thermometer reads 130–135°F.
  6. Let the steaks rest for 10 minutes. Slice a few rounds of the tomato-herb butter and place them on top of the steaks while they rest so the butter melts slightly.
  7. Slice the sirloin against the grain and serve alongside the corn tomato salad.
