INGREDIENTS:

  • 2 Grass Run Farms 100% Grass Fed Ribeye Steaks
  • 1½ tsp kosher salt, divided
  • ½ tsp black pepper, divided
  • 1 tbsp neutral oil, for searing

SHISHITO PEPPERS:

  • 8 oz shishito peppers
  • 1 tbsp olive oil, for shishitos
  • 1 pinch flaky salt, for shishitos

PEACH CHIMICHURRI:

  • 1 ripe peach, pitted and diced small
  • 1 cup flat-leaf parsley, finely chopped
  • ½ cup fresh oregano leaves, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • ½ cup olive oil, for chimichurri
  • ½ tsp red pepper flakes
  • ½ tsp kosher salt, for chimichurri

INSTRUCTIONS

  1. Pat ribeye steaks dry and season all over with 1½ teaspoons kosher salt and ½ teaspoon black pepper, reserving about a third of the salt and pepper for the shishito peppers. Let the steaks sit at room temperature while preparing the remaining ingredients.
  2. Make the peach chimichurri by combining diced peach, chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and kosher salt in a bowl. Stir to combine and set aside.
  3. Heat a grill or grill pan over high heat. Toss the shishito peppers with olive oil and grill or sauté, tossing frequently, until blistered and charred in spots, about 5 minutes. Remove and sprinkle with flaky salt.
  4. Heat the neutral oil in a heavy skillet or on the grill over high heat. Sear the ribeyes for about 8 minutes per side for medium-rare, or until a thermometer reads 130–135°F. Remove from the heat and let rest.
  5. Let the steaks rest for 8 minutes before slicing against the grain.
  6. Plate the sliced ribeye alongside the charred shishito peppers and spoon the peach chimichurri generously over the top.

Quick Cooking Tip

For best results, always rest steaks after cooking. It keeps juices locked in, ensuring every bite is tender and flavorful.
