  • 3 Tbsp. olive oil
  • 1 1/2 Tbsp. butter
  • 12 Crostinis
  • 2 Garlic cloves
  • 1 sprig rosemary

CARAMELIZED ONIONS:

  • 1 Yellow onion, thinly sliced
  • 1 1/2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 1/4 tsp. kosher salt

HORSERADISH CREAM:

  • 1/2 cup sour cream
  • 2 Tbsp. prepared horseradish
  • 1 1/2 Tbsp. mayonnaise
  • 1 tsp. apple cider vinegar
  • 1 tsp. Worcestershire sauce
  • 4 Tbsp. chives, minced
  • 1/2 tsp. kosher salt
  • 1 tsp. freshly cracked black pepper

INSTRUCTIONS

  1. Melt 1 Tbsp. butter with 1 Tbsp. olive oil in a skillet over medium-low heat. Add the onion and 1 1/4 tsp. salt, and cook, stirring occasionally, until deep golden and jammy, 30–40 minutes. Set aside.
  2. Stir together sour cream, horseradish, mayo, apple cider vinegar, Worcestershire sauce, 2 Tbsp. chives, ½ tsp. kosher salt, and ¼ tsp. black pepper in a bowl. Set aside.
  3. Pat the sirloin dry and season it generously with salt and pepper. Heat a cast-iron skillet over high heat until smoking, about 5 minutes. Add 3 Tbsp. olive oil and lay in the steak. Flip it every 2 minutes until it’s about 120°F below your target temperature.
  4. Add 1 1/2 Tbsp. butter, garlic cloves, and rosemary, setting the garlic and rosemary on top of the steak. Tilt the pan and spoon the melted butter over the steak for 1–2 minutes.
  5. Let the steak rest on a wire rack for 8 minutes. Slice it thinly, about 1/4 inch thick, against the grain.
  6. Top each crostini with a slice of steak, a small spoonful of caramelized onions, and a dollop of horseradish cream. Finish with chives and cracked pepper.
