Divide each package of beef into thirds to create 6 1/3-pound patties.
Pre-heat grill. Place patties directly on the grill and cook for about 3 minutes on each side or until the internal temperature reaches 160°F or your preferred doneness.
Slightly sauté onion and pepper slices in a non-stick pan.
Place lettuce on bun. Top lettuce with burger. Place goat cheese on warm burger. Top with a couple of red pepper and onion slices.
