If you’re on the hunt for a quick meal that offers international flavor and lots of nutrients, you’re in luck. This Korean-inspired ground beef bowl takes 30 minutes and features beef’s top 10 nutrients (including B vitamins, protein, iron, and zinc), as well as vitamin C from carrots and probiotics from kimchi.

Ingredients

  • 1 lb Grass Run Farms Ground Beef
  • 1 Tbsp toasted sesame oil
  • 3 Tbsp low sodium soy sauce
  • 4 cloves garlic, minced
  • 2 Tbsp rice vinegar
  • 2 Tbsp honey
  • 1 Tbsp gochujang
  • 2 Tbsp fresh ginger, grated
  • ½ tsp crushed red pepper flakes
  • 1 bundle of scallions, diced
  • 3 cups cooked rice, farro, or cauliflower rice
  • 1 tsp sesame seeds
  • 1 cucumber, thinly sliced
  • 8 radishes, thinly sliced
  • 2 carrots, shredded
  • Kimchi
  • Chili garlic sauce, to taste

Directions

  1. Heat a large skillet over medium-high heat. Add beef, breaking it into small pieces.
  2. While the beef is cooking, in a small bowl whisk sesame oil, soy sauce, honey, gochujang, rice vinegar, garlic, red pepper flakes, and ginger.
  3. When the beef is cooked, drain off any excess liquid and return the skillet to the stove.
  4. Add the sauce and most of the scallions to the pan. Stir and cook for 2 minutes. Allow sauce to simmer, but not evaporate.
  5. Remove from heat and sprinkle the remaining scallions over the top.
  6. Serve the beef warm, over rice, farro, or cauliflower rice. Top generously with sesame seeds, cucumber, radishes, carrots, kimchi, and chili garlic sauce.
