100% GRASS FED BEEF
Preheat oven to 450°F. In a large cast-iron skillet, melt 2 tbsp of the butter over medium heat. Add the mushrooms and cook for 10 minutes then season. Add the stock and demiglace and bring to a boil. Simmer until thickened. Whisk in the remaining 4 tbsp of butter and season with salt and pepper. Transfer to a medium bowl or saucepan and keep warm. Wipe the skillet. Rub the steaks with the olive oil and season. Sear over moderate heat until browned, about 2 minutes per side. Move the skillet to oven and cook the steaks until inside is 125°F. Remove and let rest for 5 minutes. Serve with sauce.
