  1. Place beef chuck roast in large slow cooker. Season with minced garlic, salt, and pepper.
  2. Add beef broth, chopped onion, and mushrooms, then cook on low for 7-8 hours or until the meat is fork-tender.
  3. After 6 hours in the slow cooker, add the stroganoff seasoning packet and stir in the light sour cream.
  4. At 7-8 hours, shred the meat. Then, add the dry noodles and cook on high for another 30 minutes or until the noodles are soft.
  5. Serve and enjoy.
