Chef Cory Bahr’s Traditional Barbacoa recipe combines 100% grass fed chuck arm roast with beer, garlic, chipotle chiles, and more mouthwatering ingredients.


  • 100% Grass Fed Chuck Arm Roast
  • 2/3 cup of your favorite beer
  • 4 garlic cloves, chopped
  • 1 white onion, chopped
  • 1 poblano pepper, chopped
  • Chipotle chilies and adobo
  • 1/4 cup lime juice
  • 2 tbsp cider vinegar
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 1 tbsp oregano
  • 1 tbsp cumin
  • Couple bay leaves
  • Clove
  • Pinch of olive oil
  • Soft corn tortillas or huaraches
  • Red onion
  • Fresh lime juice
  • Cilantro
  • Hot sauce


  1. Set Instant Pot to sauté and add the Chuck Arm Roast.
  2. Sear for about 6 minutes on either side.
  3. Add your favorite beer, garlic, white onion, poblano pepper, chipotle chilies and adobe, lime juice, cider vinegar, salt, pepper, oregano, cumin, bay leaves, clove, and olive oil to the InstaPot.
  4. Mix all the ingredients around, put the lid on the Instant Pot, and let it pressurize for an hour.
  5. Release pressure from Instant Pot and take lid off.
  6. Start with a soft corn tortillas or huaraches – add barbacoa on top generously, making sure to include enough of the barbacoa juice.
  7. Top with fresh lime juice, red onion, cilantro, and hot sauce.
  8. Serve and enjoy!
